M. Cunningham's buttermilk pancakes

..Apparently these are to-die-for...not literally but you get my drift.

MARION CUNNINGHAM'S THE BREAKFAST BOOK BUTTERMILK PANCAKES
Adapted by Shuna fish Lydon

1 Cup Buttermilk
2 Large eggs
3 Tablespoons unsalted butter, melted
1 Cup all purpose flour
1/2 teaspoon Kosher salt
1 teaspoon baking soda, sifted

"1. Put the buttermilk, eggs and melted butter into a mixing bowl. Whisk to combine thoroughly.
2. In another large bowl whisk together flour, salt and sifted baking soda. Make a "well" in center.
3. Pour the buttermilk mixture into the center of the "well" and stir until combined, but do not over mix-- a few lumps are ok.
4. Heat up a cast iron skillet slowly until medium hot. I place my hand over the surface of the pan, hovering near an inch over the surface. If I feel heat radiating out, it's ready.
5. Melt a small pat of butter in skillet. If the butter immediately browns, turn heat down.
6. Scoop large dollops of batter into prepared pan. Do not crowd pancakes; you will need room to flip them.
7. When bubbles form across the entire surface, flip pancakes. Pancakes should only be flipped once.

I like to heat up my oven and keep a plate inside so that I can place the ready pancakes in there to wait, thereby being able to sit down with the person I'm eating pancakes with. This recipe has made anywhere from 6-8 average sized pancakes

If you like a fluffier pancake add 1/4 teaspoon more baking soda. If you want a butterier pancake, add 1 tablespoon more melted butter or decrease the flour to 3/4 Cup. If you like an even flatter pancake than me, add 1/4 Cup more buttermilk or whole milk. "

Melt-in-your-mouth Strawberry Muffins



1 Cup all purpose flour
1 Cup whole wheat flour
1/2 Cup sugar
1 1/2 tsp baking soda
2eggs
1 cup Stonyfield farm yogurt(pref plain or any else)
1/4 cup butter, melted
1 tsp vanilla
1 cup chopped strawberries, fresh or frozen

Directions:

Preheat oven 375 degrees f. Ina bowl, mix together flours, sugar, and baking soda. In another bowl, mix eggs, yougurt, butter and vanilla. Toss strawberries into the flour mixture. Then pour yogurt mixture into flour mixture and stir. Spoon batter into greased nuffin tin. Bake for 20-25 minutes, or until topps are golden brown. Yields 12 muffins

Use YoGurt instead

I delight in swimming my tongue in a spoonful of Stonyfield Farm's Organic Vanilla yogurt. Its ridiculously creamy and just perfect for a little morning sunshine or whenever a sugar crave attacks. Well, it had been weeks since I've enjoyed my yogurt and today was ..awesome! But what was even more awesome was the insight underneath the lid.

Did you know you can substitute sour cream/mayo with yogurt? Me neither. I mean it makes total sense...its practically the same stuff. You can totally "lighten Up" your meal with yogurt.

Scrumptious Sweet Potato Pie




Saw this on a box by Betty Crocker



Makes 2 9in pies

Need:

1 Box Betty Crocker(r) sweet potato casserole
2 Cups water

1 1/4 Cups milk

1/3 Cup marg or butter

1 box (15oz) Pillsbury(r) refrigerated pie crusts, softened as directed on box

1 3/4 cups milk

3/4 Cup packed light brown sugar

1 tsp ground cinnamon

1/2 tsp nutmeg
2 tsp vanilla

5 eggs, slightly beaten

  1. heat oven to 375 degrees F. Set Pecan Strusel Topping aside. In 3-quart saucepan, heat 2 cups water, 1 1/4 cups milk and 1/3 cup marg/butter to a rapid boil. Remove from heat. Stir in both pouches Sweet Potatoes with Seasoning until well blended. Pour into large bowl.


  2. Place pie crusts in two 9-inch glass pie plates as directed on box for One-Crust Filled Pie.


  3. With wire whisk, beat 1 3/4 cups milk, brown sugar, cinnamon, nutmeg and vanilla into sweet potato mixture. Beat in eggs until well blended. Divide mixture evenly between pie crusts. Cover edges of both crusts with strips of foil.


  4. Bake 25 min. Sprinkle Pecan Streusel Topping evenly over tops of pies. Bake an additional 20-25 minutes or until knife inserted comes out clean. Cool completely, about 2 hrs. Serve w/ whipped cream and sprinkle with additional cinnamon, if desired.



high altitude (3500-6500 ft): increase 2nd bake time to 25-30 min.

Introducing aerie

Lately I've been looking into aerie. Its a brand name marketed off by American Eagle...another store I like to shop from. I particularly fell in love with a shirt made my aerie, bought it and have been oogling over it since. I can't grasp why I love it so much...has something to do with the shape, fit, and design...it all just blends together so well. Anywho, I can't seem to find anymore shirts made by aerie. I've been so bummed. However, I was scanning their website today and came across this baby. Of course, I fell in love with it and now I want it. So if your the lucky turd who can afford this now well high 5 to ya! becausde You suck! lol ;0) just kidding i love ya, but seriously.

Barbecue sauce

not sure the whereabouts of this came from but I found it to be tasty.

Barbecue Sauce

need:
2 Cups Ketchup
1 Cup Packed Brown sugar
2 tbsp Worcheshire sauce
1/2 Cup BBQ Sauce

as far as I know you just add an ingredient then mix, add then mix, cont...
A barbecue chicken sandwich with chips and a cold drink sounds good right about now....Ouuu and a slice of Red watermelon....Can you tell summer is here!

Home Made

Gotta love that word(or words/whichever)! Most anything tastes better homemade. So I was envying and daydreaming today about how lovely it would be to have my own big backyard with plenty of room to grow any vegetation I wanted. Tend to it, care for it, and love it is all it takes...oh and water. So today Im making my wishlist and Im jotting down right here, dog gone it...and so help it someday it WILL come to pass.



My "growing" wishlist:



Trees:
the lemon,
the blood orange,
the ruby grapefruit,
the plum,
the cherry
the peach.
(homegrown oxygen! you can't go wrong!)
green grapes(mmmmm...delicious to the taste)
blackberries(black-classy, berry-o'delish)
rosebush(for smell, beauty, and memories sake)





Im still debating which garden fruits and veggies but "for sures" would be:
watermelon
corn
cucumber
lettuce
hanging tomatoes(oh yes, tis possible...see below)


(finger tapping)...I know theres more..im just shootin' blanks. Hm, oh well, to be continued...




ya know, ...Im sure as hella Glad were coming back to the "reap what you sow" era of and sticking IT to the "middle man"!!!!

How to grow a hanging tomato plant

What You Need:

A five gallon bucket with a hole in the bottom and some cord to hang is all you need to grow upside down tomato plants!
Five gallon bucket purchased at your home and garden center
Soil with the correct vitamins additives recommended for growing tomatoes (you will need one 40 pound bag of soil for each plant)
Tomato seedling (preferably a smaller variety of fruit like Roma)
Several feet of 1/8 inch cord
Utility knife








Instructions for Hanging Upside Down Tomato Plants:

You can purchase your empty five gallon bucket at any home and garden center.



A green bucket will be less ugly than the orange or white ones or you can paint your bucket whatever color you like. Be sure the inside of the bucket is clean, using warm water and mild dishwashing soap and then rinsing it well.



Next, cut a hole about two to three inches in diameter in the center of the bottom with your utility knife.



Lay several layers of newspaper in the bottom of the bucket and cut a small slit in the newspaper through the hole in the bucket; this will help hold the seedling in place when you initially hang the bucket.



Drill four small holes evenly around the top edge of the bucket to attach your cord. You will want to measure the distance from the hook or other point you will hang the bucket from.







Cut four lengths of cord and tie one end of each piece to each of the four holes.


Turn the bucket on its side and carefully remove your tomato seedling from the container it came in and thread it through the slit in the newspaper so that the stem protrudes through the hole in the bucket and the roots are inside the bucket.



Fill the bucket with the potting soil, which you can purchase along with your bucket at any home and garden center or local nursery; be sure it contains the right vitamin additives suggested for tomatoes. ---Be gentle to your seedling and try to allow it to protrude about three inches out of the hole in the bottom of your bucket.



Cut several holes in the lid and place the lid on the bucket, taking care you do not harm your seedling in the process!



Now you are ready to hang your bucket in a sunny place with plenty of room below for your tomato plant to grow down. Tomatoes need a lot of sun so do not hang it in a predominately shady spot; it should get direct sunlight at least fifty percent of the day.




Keep your upside down tomato plant well watered and in about 50 to 75 days you should begin to see flowers and not long after you will have tomatoes.


Let your tomatoes ripen on the vine and pick them as they become red and firm and ready to eat!

Hanging Tomato Plant Tips:
Plant tomatoes such as cherry or Roma varieties that have smaller fruit, which do best with the upside down hanging tomato growing method.




If you don’t like the look of a five gallon bucket, you can also purchase planters specifically made for hanging tomatoes.




Be sure to pick a solid place and use a good strong hook or other means from which to hang your tomato plants; each planter will weigh between 35 and 40 pounds.
Plant your hanging tomato plants in spring (between late April and early June depending on how far north you are located) so that you can enjoy fresh tomatoes all through the growing season. "

I P

Okay so thats obvious...of course I pee....but thats not what I mean.(chuckle) Nah, what "I" am talking about is IP config(short for: configuration). This is a process that my cox renews everyday...my computer's "address" so to speak.











The helpful costomer service Male Rep at Cox told me the simple process(of renewing the address) and I must not forget it. So here is where it shall go for future reference.





Steps to IP Config:


  1. click on Start menu

  2. select "Run"

  3. in box type "cmd", hit enter

  4. in box type" Ipconfig", enter

  5. "ipconfig /release" make sure there is a space btwn "ipconig" and " / ".enter

  6. "ipconfig /renew" same as above. enter

  7. DONE

"We MEAN Clean"

Im in the market for a new vacuum and heard Bissell was good. But How do know what kind is best? Beats me! I like bags because in my opinion its mess free VS bag less which requires you to empty it where all those dust particles that you just sucked up are now floating around again because they're not contained...dumping it into a trash can isn't called "contained". besides don't you have to change the dang filters often? How much extra is that going to cost me? Bags are cheaper too...i think...in most cases. Though, I could be wrong.


Next here in cue for a future purchase would be my own personal carpet cleaner.

Why pay $100+ dollars to get my carpets cleaned every 5 yrs(however often they should be cleaned), when I can spend that same amount of money ONCE and clean it however often, whenever I want them to be cleaned, Necessary or not. Company staying or not. Major spills or not. ya know? So after seeing what this baby can do on HSN today...im convinced.

This things is AWESOME! And dries from carpets and rugs(etc) in less then 30 minutes.
All I can say is you gotta see this product in action...my words just wont do it justice.
